Instructions
  1. Heat olive oil in a large non-stick pan over medium heat

  2. Sauté diced onion and bell pepper for 3-4 minutes until softened

  3. Add drained and rinsed black beans, cumin, paprika, salt and pepper. Cook for 2 minutes

  4. In a bowl, whisk together whole eggs and egg whites

  5. Add eggs to the pan and scramble gently with the vegetables and beans

  6. Warm tortillas in microwave for 30 seconds

  7. Divide egg mixture between tortillas

  8. Top with cheese, diced avocado, and salsa

  9. Roll tightly and serve immediately
