Instructions
  1. Heat oven to 425F (220C).

  2. Toss Brussels sprouts with 1 tbsp olive oil, salt, and pepper.

  3. Roast Brussels sprouts for 20-25 minutes until caramelized.

  4. Meanwhile, heat 1 tbsp butter in a large skillet over medium-high heat.

  5. Season the cod with salt and pepper, then pan-sear for 4-5 minutes per side until cooked through.

  6. Remove cod and set aside.

  7. In the same skillet, add spinach and heavy cream, stirring until spinach wilts and sauce thickens (3-4 minutes).

  8. Prepare rice according to package directions.

  9. Plate rice, top with cod, and spoon creamed spinach over the top.

  10. Arrange roasted Brussels sprouts on the side.
