Instructions
  1. Cut pressed tofu into 1-inch cubes

  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat

  3. Pan-sear tofu cubes for 3-4 minutes per side until golden, remove and set aside

  4. Add remaining oil to the skillet

  5. Stir-fry carrots for 2 minutes, then add bell pepper and broccoli

  6. Cook for 4-5 minutes until vegetables are tender-crisp

  7. Add garlic and ginger, cook for 30 seconds

  8. Return tofu to skillet, add soy sauce and water

  9. Toss everything together and cook for 1-2 minutes until sauce coats vegetables

  10. Serve over cooked brown rice
