Grilled Pork Chop with Sweet Potato and Broccoli

Preheat oven to 200°C (400°F). Cut sweet potato into 1cm cubes and toss with 10ml olive oil, salt, and pepper.
Roast sweet potato in oven for 25 minutes until golden and tender.
Season pork chops with salt, pepper, and rosemary. Heat remaining olive oil in grill pan over medium-high heat.
Grill pork chops for 6-7 minutes per side until cooked through (internal temperature 63°C).
Steam broccoli florets for 5-6 minutes until tender-crisp.
Melt butter in small pan, add minced garlic and cook for 1 minute. Toss with steamed broccoli.
Arrange pork chop, roasted sweet potato, and garlic broccoli on plate.
