Instructions
  1. Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat

  2. Add diced chicken and cook until golden and cooked through, about 6-7 minutes, then remove and set aside

  3. Add remaining 0.5 tbsp sesame oil to the pan

  4. Scramble the egg until cooked, then push to the side

  5. Add minced garlic, diced carrot, and bell pepper, stir-fry for 2 minutes

  6. Add cooked rice, breaking up any clumps, and stir-fry for 2 minutes

  7. Add edamame, peas, and cooked chicken back to the pan

  8. Pour soy sauce and water over the rice mixture, toss well to combine

  9. Stir-fry for another 1-2 minutes until everything is heated through and well combined

  10. Serve warm
