Instructions
  1. Rinse farro and cook in vegetable broth for 25-30 minutes until tender. Drain if needed.

  2. Toss carrots and beets with 5ml olive oil, salt, and pepper. Roast at 200°C for 20 minutes.

  3. Heat 10ml olive oil in a skillet over medium-high heat.

  4. Brown ground beef, breaking it apart as it cooks, about 5 minutes. Remove and set aside.

  5. In the same skillet, sauté mushrooms and garlic with thyme until golden, about 6 minutes.

  6. Return beef to skillet, add roasted vegetables, and mix with cooked farro.

  7. Season with salt and pepper to taste. Serve warm.
