Instructions
  1. Rinse quinoa under cold water and drain

  2. Bring vegetable broth to boil, add quinoa and reduce heat to low, cover and cook for 15 minutes

  3. While quinoa cooks, toss carrots with 6ml olive oil, garlic, thyme, salt and pepper

  4. Roast carrots at 200°C for 20 minutes until tender and caramelized

  5. Heat remaining 6ml olive oil in a grill pan over high heat

  6. Season beef steak with salt and pepper on both sides

  7. Grill steak for 4-5 minutes per side for medium-rare, then rest for 3 minutes

  8. Fluff quinoa with a fork

  9. Plate steak with quinoa and roasted carrots
