Instructions
  1. Cook brown rice according to package directions

  2. Preheat oven to 200°C (400°F)

  3. Press tofu to remove excess water, then cut into cubes

  4. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, garlic, and ginger for teriyaki sauce

  5. Toss tofu cubes with half the teriyaki sauce

  6. Arrange tofu on baking sheet and bake for 25 minutes, flipping halfway

  7. Steam broccoli, snap peas, and carrots for 8-10 minutes until tender-crisp

  8. Heat remaining teriyaki sauce in a small pan until thickened

  9. Serve tofu over brown rice with steamed vegetables

  10. Drizzle with teriyaki sauce and garnish with sesame seeds and green onions
