Instructions
  1. Preheat oven to 400°F (200°C)

  2. Cut baby potatoes in half and toss with 5ml olive oil, salt, and pepper

  5. After 15 minutes, add fennel and tomatoes to the baking sheet

  6. Place halibut fillet on parchment paper, drizzle with lemon juice and remaining olive oil

  7. Season with minced garlic, salt, pepper, and fresh dill

  8. Place halibut on the baking sheet with vegetables

  9. Bake for 10-12 minutes until halibut is cooked through and flakes easily

  10. Serve immediately with roasted vegetables
