Rinse the quinoa under cold water. Add to a pot with 2 cups of water and bring to a boil. Reduce heat and simmer for 15 minutes until water is absorbed.
In a large bowl, combine cooked quinoa, chopped kale, halved cherry tomatoes, diced cucumber, and rinsed chickpeas.
In a separate bowl, whisk together olive oil, lemon juice, cumin, and black pepper.
