Instructions
  1. Cook rice according to package instructions

  2. Crush garlic cloves and slice onion

  3. In a bowl, marinate chicken with soy sauce, vinegar, garlic, bay leaves, and peppercorns for 30 minutes

  4. Heat oil in a heavy-bottomed pot over medium heat

  5. Remove chicken from marinade and brown on all sides, about 8 minutes

  6. Add onion and cook until softened

  7. Pour in marinade and water, bring to a boil

  8. Reduce heat to low, cover and simmer for 25-30 minutes until chicken is tender

  9. Remove lid and simmer until sauce reduces and thickens

  10. Serve hot over steamed rice
