Instructions
  1. Press tofu to remove excess water, then cut into 1-inch cubes

  2. Cook brown rice according to package directions

  4. Toss tofu cubes with half the cornstarch and vegetable oil

  5. Bake tofu for 25-30 minutes, flipping halfway through, until golden and crispy

  6. Meanwhile, steam edamame for 5 minutes

  7. For teriyaki sauce: whisk together soy sauce, honey, rice vinegar, minced ginger, and garlic

  8. Mix remaining cornstarch with water to create slurry

  9. Heat sesame oil in a small saucepan, add teriyaki mixture and bring to simmer

  10. Add cornstarch slurry and stir until sauce thickens

  11. Toss baked tofu with teriyaki sauce

  12. Serve over brown rice with edamame, garnished with green onions and sesame seeds
