Salmon Fillet with Sweet Potato and Green Beans
Baked salmon fillet with omega-3 fatty acids, roasted sweet potato wedges, and sautéed green beans with garlic

Cut sweet potato into wedges, toss with 8ml olive oil, salt, and pepper
Spread sweet potato wedges on a baking sheet and roast for 25 minutes
Place salmon on a separate sheet, drizzle with 5ml olive oil, season with salt, pepper, and thyme
Squeeze lemon juice over salmon
Bake salmon for 12-15 minutes until cooked through
Trim green beans and cut into 5cm pieces
Heat 2ml olive oil in a pan, mince garlic and sauté for 30 seconds
Add green beans and sauté for 6-8 minutes until tender-crisp
Season with salt and pepper
Plate sweet potato, top with salmon, and serve with green beans on the side
