Instructions
  1. Preheat oven to 200°C

  2. Cut sweet potato into wedges, toss with 8ml olive oil, salt, and pepper

  3. Spread sweet potato wedges on a baking sheet and roast for 25 minutes

  4. Place salmon on a separate sheet, drizzle with 5ml olive oil, season with salt, pepper, and thyme

  5. Squeeze lemon juice over salmon

  6. Bake salmon for 12-15 minutes until cooked through

  7. Trim green beans and cut into 5cm pieces

  8. Heat 2ml olive oil in a pan, mince garlic and sauté for 30 seconds

  9. Add green beans and sauté for 6-8 minutes until tender-crisp

  10. Season with salt and pepper

  11. Plate sweet potato, top with salmon, and serve with green beans on the side
