Instructions
  1. Preheat oven to 400°F

  2. Cut sweet potato into thin fries, toss with 1.5 tbsp olive oil, salt and pepper

  3. Spread on baking sheet and bake for 25 minutes until golden and crispy

  4. Place cod fillet on parchment paper, drizzle with 1 tbsp olive oil

  5. Sprinkle with minced garlic, dill, parsley, salt and pepper

  6. Squeeze lemon juice over the fillet

  7. Bake cod for 12-15 minutes until flaky

  8. Steam broccoli florets for 5-7 minutes until tender-crisp

  9. Toss steamed broccoli with remaining 0.5 tbsp olive oil and season with salt and pepper

  10. Serve cod with sweet potato fries and broccoli on the side
