Lamb and Vegetable Grain Bowl
Seasoned ground lamb with roasted vegetables, farro, and tzatziki yogurt sauce

Cook farro according to package directions, about 30 minutes. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat.
Add diced onion and cook for 2 minutes until softened.
Add ground lamb and cook, breaking it apart, until browned, about 5-7 minutes. Season with cumin, oregano, salt and pepper.
Add zucchini and bell pepper to the skillet and cook for 5-7 minutes until tender.
In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, and lemon juice to make tzatziki sauce.
Assemble the bowl with cooked farro as the base, top with lamb and vegetable mixture, and drizzle with tzatziki sauce.
