Shrimp and Quinoa Power Bowl

Cook quinoa according to package instructions, about 15 minutes
Preheat oven to 200°C
Cut zucchini and bell pepper into chunks, halve cherry tomatoes
Toss vegetables with half the olive oil, salt, and pepper
Roast vegetables for 20 minutes until tender
Season shrimp with paprika, salt, and pepper
Heat remaining olive oil in a pan and cook shrimp for 2-3 minutes per side
Mix tahini with lemon juice, minced garlic, and 2 tbsp water to make dressing
Serve quinoa topped with roasted vegetables and shrimp
Drizzle with tahini dressing and garnish with fresh parsley
