  5. Transfer skillet to oven and roast for 15-20 minutes until internal temperature reaches 63°C

  6. Meanwhile, rinse quinoa and cook in chicken broth according to package instructions

  7. Cut vegetables into uniform pieces and toss with remaining olive oil, salt, and pepper

  8. Roast vegetables in the oven for 20-25 minutes until tender

  9. Let pork rest for 5 minutes, then slice

  10. Fluff quinoa with a fork and add minced garlic and lemon juice

  11. Serve sliced pork over quinoa pilaf with roasted vegetables on the side
