Instructions
  1. Preheat oven to 200°C

  2. Cut sweet potatoes into 1.5cm thick wedges, toss with 8ml olive oil, salt, and pepper

  3. Spread on baking sheet and roast for 25-30 minutes until golden and tender

  4. While potatoes roast, pat steak dry with paper towels and season generously with salt and pepper

  5. Heat 10ml olive oil in a cast-iron or heavy skillet over high heat until smoking

  6. Sear steak for 4 minutes per side for medium-rare, add minced garlic and rosemary in final minute

  7. Transfer steak to a plate and let rest for 5 minutes

  8. In the same skillet, add green beans with 2ml olive oil, garlic, salt, and pepper

  9. Sauté green beans for 5-6 minutes until tender-crisp, add 60ml beef broth and simmer 2 minutes

  10. Plate steak with sweet potato wedges and green beans

  11. Drizzle pan juices over the steak

  12. Serve hot
