Instructions
  1. Cook bulgur wheat according to package instructions, set aside

  2. Dice red bell pepper, zucchini, and red onion

  3. Heat half the olive oil in a large pan over medium-high heat

  4. Add diced vegetables and cook for 8-10 minutes until tender

  5. Season vegetables with salt and pepper, remove from pan

  6. Add remaining oil to pan and cook ground lamb with cumin, paprika, and minced garlic

  7. Cook lamb for 8-10 minutes until browned and cooked through

  8. Mix tahini with lemon juice and 2 tbsp water to make dressing

  9. Combine cooked bulgur with roasted vegetables

  10. Top with spiced lamb and drizzle with tahini dressing

  11. Garnish with fresh chopped parsley
