Instructions
  1. Preheat oven to 200°C

  2. Cut sweet potato and zucchini into chunks, cut broccoli into florets

  3. Toss vegetables with half the olive oil, salt and pepper

  4. Roast vegetables for 25 minutes

  5. Rinse quinoa and cook with vegetable broth for 15 minutes

  6. Mix breadcrumbs, grated parmesan, chopped herbs, and minced garlic

  7. Pat cod dry, season with salt and pepper

  8. Brush cod with remaining olive oil and press herb mixture on top

  9. Bake cod for 12-15 minutes until flakes easily

  10. Fluff quinoa with fork and add lemon juice

  11. Serve cod over quinoa pilaf with roasted vegetables
