Instructions

  2. Cut sweet potato, parsnip, and beets into 2cm cubes

  4. Spread on a baking sheet and roast for 25-30 minutes, stirring halfway through

  5. Pat pork tenderloin dry and season with salt, pepper, and minced garlic

  6. Heat remaining olive oil in a grill pan over medium-high heat

  7. Grill pork for 5-6 minutes per side until internal temperature reaches 63°C

  8. Let pork rest for 5 minutes, then slice

  9. Steam green beans for 5-7 minutes until tender-crisp

  10. Plate pork with roasted vegetables and green beans

  11. Squeeze fresh lemon juice over the dish before serving
