Instructions
  1. Cook brown rice according to package directions (approximately 45 minutes)

  2. Preheat oven to 400°F (200°C)

  3. Cut carrots and parsnips into 1-inch pieces

  4. Toss root vegetables with 5ml olive oil, minced garlic, thyme, salt and pepper

  5. Spread on a baking sheet and roast for 20-25 minutes until tender and caramelized

  6. Season pork tenderloin with salt and pepper

  7. Heat 5ml olive oil in a grill pan or skillet over medium-high heat

  8. Grill pork for 4-5 minutes per side until internal temperature reaches 145°F (63°C)

  9. Let pork rest for 5 minutes, then slice

  10. Serve sliced pork with roasted vegetables and brown rice
