Instructions
  1. Preheat oven to 200°C (400°F)

  2. Cut sweet potato into 1-inch cubes and toss with 5ml olive oil, salt, and pepper

  4. Place cod fillet on parchment paper, drizzle with lemon juice and 5ml olive oil

  5. Season with salt, pepper, minced garlic, and fresh thyme

  6. Add cod to the oven for the last 12 minutes of sweet potato cooking

  7. Heat remaining olive oil in a pan and sauté green beans with garlic for 4-5 minutes

  8. Season green beans with salt and pepper

  9. Plate sweet potato, cod fillet, and green beans together
