Instructions
  1. Heat olive oil in a non-stick pan over medium heat

  2. Cook ground turkey with diced onion until turkey is browned and cooked through, about 5-6 minutes

  3. Add bell pepper and cook for 2 minutes until softened

  4. Beat eggs and scramble them in the pan with the turkey mixture

  5. Add spinach and cook until wilted, about 1 minute

  6. Season with salt and pepper

  7. Warm the tortilla in a dry pan or microwave

  8. Place filling in center of tortilla, sprinkle with cheese

  9. Roll up tightly and serve immediately
