Instructions
  1. Heat olive oil in a non-stick pan over medium heat

  2. Dice onion and bell pepper, sauté for 3-4 minutes until softened

  3. Add drained black beans, cumin, paprika, salt and pepper, cook for 2 minutes

  4. Beat eggs and scramble them in the pan with the vegetables and beans

  5. Warm tortillas in a dry pan or microwave

  6. Divide egg mixture between tortillas, top with cheese and diced avocado

  7. Add salsa and roll up tightly into burritos

  8. Serve immediately while warm
