Instructions
  1. Finely dice zucchini and bell pepper

  2. Cook ground turkey in pan with olive oil for 8 minutes

  5. Place turkey mixture and cheese on one tortilla, top with second tortilla

  6. Cook quesadilla in clean pan 2-3 minutes each side until golden

  7. Cool for 2 minutes, then cut into small triangles

  8. Serve with small pieces of avocado on the side
