Instructions
  1. Preheat oven to 200°C

  2. Cut carrots and parsnips into 2cm chunks

  3. Toss vegetables with 4ml olive oil, salt, pepper, and half the fresh herbs

  4. Spread on a baking tray and roast for 25-30 minutes until golden and tender

  5. Trim any visible fat from the beef sirloin steak

  6. Pat steak dry with paper towels

  7. Heat a non-stick frying pan over medium-high heat

  8. Brush steak lightly with remaining 4ml olive oil, season with salt, pepper, and remaining herbs

  9. Sear steak for 3-4 minutes on each side for medium doneness

  10. Rest steak for 3 minutes on a warm plate

  11. Meanwhile, trim green beans and steam for 6-8 minutes until tender-crisp

  12. Plate steak with roasted vegetables and green beans
