Instructions
  1. Preheat oven to 425°F (220°C)

  2. Cook quinoa according to package instructions

  3. Cube sweet potatoes, toss with half the olive oil, rosemary, thyme, salt and pepper

  4. Roast sweet potatoes for 25-30 minutes until tender and slightly caramelized

  5. Season beef sirloin with salt, pepper, and paprika

  6. Heat remaining olive oil in a cast iron pan, sear steak 4-5 minutes per side for medium-rare

  7. Let steak rest for 5 minutes, then slice against the grain

  8. Sauté asparagus with minced garlic and butter for 4-5 minutes until tender-crisp

  9. Serve sliced beef with roasted sweet potatoes, asparagus, and quinoa

  10. Finish with a squeeze of fresh lemon juice
