Instructions
  1. Preheat oven to 400°F

  2. In a small bowl, mix olive oil, lemon juice, dill, garlic powder, paprika, salt, and pepper

  3. Place tilapia fillets on a baking sheet lined with parchment paper

  4. Brush the herb mixture over the fillets

  5. Toss Brussels sprouts with 0.5 tbsp olive oil, salt, and pepper on another baking sheet

  6. Place both baking sheets in the oven

  7. Bake the tilapia for 12-15 minutes until it flakes easily with a fork

  8. Bake the Brussels sprouts for 20-25 minutes until golden and crispy

  9. Meanwhile, heat 1 tbsp olive oil in a pot over medium heat

  10. Sauté the diced onion until softened, about 3 minutes

  11. Add the farro and toast for 2 minutes, stirring constantly

  12. Pour in the vegetable broth and add thyme

  13. Bring to a boil, then reduce heat and simmer covered for 25-30 minutes until farro is tender and liquid is absorbed

  14. Serve the baked tilapia with roasted Brussels sprouts and farro pilaf
