Cook quinoa according to package instructions and set aside.
In a skillet, heat olive oil over medium heat. Add minced garlic and chopped onion; sauté until softened.
Add chopped spinach and cook until wilted. Stir in cooked quinoa and diced chicken, season with salt, pepper, and lemon juice.
Cut the tops off the bell peppers and remove seeds. Stuff each pepper with the quinoa mixture.
Place stuffed peppers in a baking dish and cover with foil. Bake for 25 minutes.
Remove foil and bake for an additional 10 minutes until the peppers are tender.
