Instructions
  1. Preheat oven to 200°C (400°F)

  2. Cut sweet potato, carrots, and parsnips into similar-sized pieces

  3. Toss vegetables with half the olive oil, salt, pepper, and garlic

  4. Spread vegetables on a large baking sheet and roast for 20 minutes

  5. Add bell pepper strips to the vegetables and continue roasting for 10 minutes

  6. Season sea bass with salt, pepper, thyme, and rosemary

  7. Heat remaining olive oil in an oven-safe pan over medium-high heat

  8. Sear sea bass skin-side down for 3 minutes

  9. Flip fish and add lemon slices to the pan

  10. Transfer pan to oven and bake for 8-10 minutes until fish flakes easily

  11. Garnish with fresh parsley and serve with roasted vegetables
